Sugared pancakes with cherries

Serves 4 persions

1/2 kg Efko Fine Harvest cherries
15 dag flour
3 eggs
3 dag sugar
ca. 1/4 l milk
salt, fat

Method:
Whip the yolk together with sugar, add salt, flour, and as much milk as required to create a thick dough. Wash the cherries, remove the pips and mix into the dough. Finally add the egg white from the 3 eggs. Split the dough into 2 ? 3 pieces (depending on the size of the pan) and brown both    sides lightly. Then split  the slices with 2 forks, fry again until done and place on a warmed plate. Prepare the remaining dough the same way. Sprinkle the finished pancake strips with sugar and serve at the table.
