Mashed Potatoes

Serves 4 people:

4 large Efko Fine Harvest potatoes (mealy)
2 pieces of Efko Fine Harvest gherkin
1 bunch of finely chopped Efko Fine Harvest chives
4 Anchovy fillets
vinegar, oil, salt, pepper
3 tbsp cream
8 anchovy rings
1 tsp capers
2 hard boiled eggs

Method:
Cook potatoes, peel and mash while still warm,
crush anchovies, chop gherkin into small pieces.
Mix potatoes, anchovies, gherkin, vinegar, oil, pepper, salt and
cream, and serve generous portions on each plate. Decorate plates with anchovy rings, capers and eggs. Then strew chives on top.
