Serves 4 persons:
8 medium-sized Efko Fine Harvest potatoes (mealy)
For the filling:
1 Efko Fine Harvest gherkin
10 cloves Efko Fine Harvest garlic
1 / 4 l yogurt
1 tbsp dill (chopped)
salt, pepper
Method:
Preheat oven to 200 °C. Wash potatoes and bake for ca. 1
hour (use centre rack). To prepare the filling, cut of the ends of the gherkin. Then peel, cut lengthwise in halve and scrape out the seeds (best with a spoon). Finely grate the gherkin, squeezed out the juice. Then mix with yogurt and dill, and season with salt, pepper and crushed garlic.
Then take the potatoes from the oven and use a sharp knife to make an opening. Open up the potato to create a cavity.
Fill with gherkin cream and serve instantly. Goes well with slices of fried tomato.
